What to look for when buying a wood-fired pizza oven

Wood-fired pizza ovens are not all the same. The difference between a well-built oven and a poorly built one shows up in performance, durability, and the quality of food it produces. If you are spending $300 to $3,000+ on a wood-fired oven, knowing what to look for protects your investment and helps you end up with something you will use for years.

Here are seven specifications that matter.

1. Steel Grade

The body of a wood-fired oven is subjected to extreme thermal stress — temperatures swinging from ambient to 950°F and back, repeatedly, over years of use. The steel grade determines how well the oven handles this over time.

304 stainless steel resists corrosion and handles repeated thermal cycling without warping or degrading. All WPPO ovens carry 304 stainless steel construction.

Lower-grade steel (201 stainless or carbon steel) is cheaper to manufacture and less resistant to corrosion and repeated thermal stress.

2. Insulation Type and Thickness

Insulation determines how efficiently the oven retains heat. A well-insulated oven uses less wood to maintain cooking temperature, recovers temperature faster when the door is opened, and produces more consistent results through a long cooking session.

Double-walled fire-blanket insulation is the construction to look for. The fire blanket material — a high-temperature ceramic fiber — fills the space between the inner and outer walls and dramatically reduces heat loss. Single-wall construction or thin insulation produces an oven that runs hotter on the outside (a safety concern) and cooler on the inside (a performance concern).

3. Stone Floor Material and Thickness

The stone floor is a key component in a pizza oven. It is what actually cooks the base of your pizza — the direct conductive heat from the stone into the dough is what produces the correctly cooked, slightly crispy undercarriage that defines well-made pizza.

Cordierite is the correct material. It is thermally stable at extreme temperatures, distributes heat evenly, and holds up to repeated high-heat cycles without cracking.

Thickness matters as well. Thicker cordierite stone holds more heat, distributes it more evenly, and is more resistant to thermal shock. Thin stone — under 10mm — is more susceptible to cracking and produces less even heat distribution.

4. Maximum Temperature

Authentic Neapolitan pizza requires 800-950°F. An oven that cannot reach and sustain this temperature range cannot produce the correct result. Full stop.

Look for ovens rated to at least 800°F. All WPPO ovens are rated to 950°F.

5. Cooking Surface Area

Cooking surface determines how many pizzas you can cook simultaneously and therefore how quickly you can feed a group. A 25" surface handles one pizza at a time. A 32" handles two. A 42" handles three to four.

Match the cooking surface to the size of the groups you regularly cook for. A common mistake is undersizing — buying a smaller oven to save money and then finding it cannot keep up when you have guests. Sizing up costs more upfront but saves frustration every time you entertain.

6. Shipping and Freight Method

This one is easy to overlook but it matters significantly. Wood-fired ovens are heavy.

Look for pallet freight with liftgate service — meaning the oven ships strapped to a pallet, the freight carrier brings the pallet to your location, and a liftgate on the truck lowers it to ground level.

7. Warranty and Dealer Status

Buy from an authorized dealer. Authorized dealers sell factory-genuine products and have direct relationships with the manufacturer for warranty claims. Gray-market sellers (third-party marketplaces, unauthorized resellers) may sell at lower prices but may not offer manufacturer warranty coverage.
