Why Wood-Fired Ovens Are Different

A conventional home oven maxes out at around 500°F. That is fine for roasting vegetables or baking bread, but it is nowhere near hot enough to produce a true Neapolitan pizza. Authentic Neapolitan crust requires temperatures between 800°F and 950°F — heat that chars the crust in seconds, creates those distinctive air pockets, and produces a texture that is simultaneously crispy on the outside and soft in the middle.

Wood-fired ovens achieve this through a combination of three heat sources working simultaneously: the open flame produces convective heat that circulates around the oven dome, the stone floor absorbs and radiates conductive heat directly into the base of the dough, and the dome itself reflects radiant heat back down onto the top of the pizza. The result is a cook that happens in 60 to 90 seconds and produces results a conventional oven can't.
